My wife crafted a Dutch Oven bread with just four ingredients—flour, water, salt, and yeast—some of the best bread I had in a long while. I was surprised by how something so simple could be so delicious so she took me down the rabbit hole of all the additives in store-bought bread, preservatives that make it last for weeks, and how unnatural ingredients might be contributing to the digestive issues so many people face in America. Meanwhile, around the world, people eat fresh, pure bread every day without a second thought. I knew I wanted better for my family.

So, I began a journey. What started as a curiosity grew into a passion, and then into something much more. Every week, I experimented, sometimes failing but always learning from my mistakes and what the pros had to teach, and I was hooked. My kids would ask for “Daddy’s bread,” and soon, neighbors and friends were sharing in the goodness, too. Eventually, they all encouraged me to share my bread more widely, believing that others deserved a taste of something real, something made with care & respect for what we put in our bodies.

All our loaves go through an extended fermentation process to break down gluten for easier digestion.
